Instant Pot Stuffed Pepper Soup: Savor the Flavors!

Introduction
I love soup all year long! It’s hot here in Florida now, which prevents me from cooking in my oven. But I’ve been craving stuffed peppers lately. Also, bell peppers are in season at my local farmers market. I pulled out a recipe I made last winter for stuffed pepper soup. We enjoyed it just as much!
For me, the best device for cooking, especially at this time of year due to the heat, is an Instant Pot. I love my 8-quart Instant Pot Duo Crisp 11-in-1 because it takes the place of so many small kitchen appliances – pressure cooks, slow cooks, air fries, roasts, plus you can saute in it and do a lot more. Looking at the description of the newer Pro Crisp model, it seems they are the same with the same features. The Pro Crisp may be slightly cheaper with a premium cookware-grade inner pot with stay-cool silicone handles.

Stuffed Pepper Soup – an Instant Pot Recipe
Equipment
Ingredients
- 1 1/4 pounds ground sirloin
- 1 onion finely diced, medium size
- 2 bell peppers diced, large
- 29 ounce diced tomatoes we use Contadina
- 25 ounce marinara sauce we use Silver Palate San Marzano Marinara
- 16 ounces chicken broth we use Progresso
- 6 ounce tomato paste we use Contadina
- 1/4 tsp dried thyme
- 1/4 tsp dried sage
- 8 grinds black pepper freshly ground
- 4 grinds sea salt freshly ground
- 4 cups Minute Rice
Instructions
- Set your Instant Pot to the Saute setting. Brown the ground beef. Remove the meat from the pot and spoon out most of the fat, leaving just enough for partially cooking the vegetables.
- Add the diced onions and diced peppers to the pot. Cook them until the onion is translucent but not brown.
- Shut off your Instant Pot by pressing Cancel. Add all remaining ingredients (meat, diced tomatoes, marinara sauce, chicken broth, tomato paste, thyme, sage, black pepper, and sea salt), except for the cooked minute rice. Close and seal your Instant Pot. Make sure the steam valve is closed. Set the Instant Pot on Pressure Cook (or Manual) for 15 minutes. The pot will pressurize and your soup will cook.
- While the soup is cooking, prepare the rice according to the directions on the box.
- Once finished, do a quick release by turning the steam release valve to the venting position. Once the float valve drops, remove the lid. Check to see if you like the level of seasonings in the soup. Adjust if you feel it needs it (you might want to add things like garlic powder, onion powder, oregano, Italian seasoning, basil, salt, and/or pepper if you prefer a stronger flavor).
- Serve your soup in bowls, each topped with 1/2 cup cooked Minute Rice. We found it's best to keep the rice separate from the soup so it doesn't absorb all the moisture).
