Quick & Easy Chicken Fajitas for Busy Weeknights

Chicken Fajitas are one of my favorite meals to order when dining out. Thanks to Lawry’s Fajita Seasoning, you can make them at home when you crave them!

Make Chicken Fajitas at Home!

We’re trying to eat at home more often rather than dining out. To keep things interesting, we develop recipes for the meals we love to order when dining in restaurants.

Unquestionably, the key to this recipe for us was finding the right seasoning. I’ve bought many of the packet Fajita seasoning mixes found in your local grocery stores. To me, they lacked the flavor I wanted.

The Product That Makes Chicken Fajitas Oh So Good

One of our go-to brands is Lawry’s, sold on Amazon in larger packages for commercial kitchens. The large packet of Lawry’s Fajita Seasoning Mix contains 63 teaspoons, which would be enough for use in 7 recipes following what we do. We have it on our auto-order list with Amazon, which reduces the price far below what we’d spend if we bought individual packets (of something we don’t like nearly as much!). We pour the large packet into a plastic zip-lock-type container for storage.

Chicken Fajitas

Chicken fajitas are one of my favorite meals at a Mexican restaurant. Now thanks to Lawry's Fajitas Seasoning Mix, we make it at home whenever we get the craving!

Equipment

  • 1 Wok (or a large non-stick deep skillet)

Ingredients

  • 4 tbsp olive oil divided
  • 3 onions large, cut into wide slices
  • 5 bell peppers cut into wide slices
  • 3 pounds chicken breasts or tenderloins boneless, skinless, cut into strips
  • 4 tbsp Fajita Seasoning Mix Lawry's
  • 12 flour tortillas soft
  • 8 ounce cheddar cheese Sargento shredded sharp
  • 8 ounce salsa fresh or jarred
  • 8 ounce sour cream

Instructions

  • Pour 2 tablespoons olive oil into the wok. Heat until hot on medium high heat.
  • Add the sliced chicken breasts or tenderloins (you may need to do this in two batches). Cook for 4-5 minutes. Remove and set aside.
  • Pour in the remaining olive oil. Add in the onions & pepper slices, cooking for 5 minutes.
  • Return the chicken to the wok. Sprinkle with Lawry's Fajita Seasoning. Stir to combine. Cook for 3 more minutes.
  • Serve with soft tortillas, shredded cheddar cheese, salsa, and sour cream.
