An Introduction
Near our home, there’s a lakefront restaurant where we dine. They serve “Bayou Shrimp Pasta” for dinner, and it’s one of our favorites. John tasted it and thought he could replicate the recipe. Sure enough, he did! Here’s how it’s made.
The Recipe for Bayou Shrimp Pasta with Sundried Tomatoes & Mushrooms over Fettuccine
Bayou Shrimp Pasta with Sundried Tomatoes & Mushrooms over Fettuccine
Equipment
Ingredients
- 16 oz fettuccine
- 2 tbsp olive oil
- 1 lb shrimp pre-cooked, peeled & deveined
- 7 cloves garlic minced
- 3 tbsp Old Bay Seasoning
- 12 oz mushrooms thinly sliced
- 7 oz sundried tomatoes Alessi Premium Julienne Cut in olive oil (drained the olive oil, did not use)
- 2 cup half n half
- 2 cup Parmesan cheese shredded
Instructions
Cook the Pasta
- Cook the pasta according to the package directions. Drain. Reserve some of the pasta water in case you need to thin the sauce.
Cook the Garlic, Mushrooms, & Sundried Tomatoes
- Place 2 tbsp olive oil in the skillet. Heat until hot.
- Add in the minced garlic & drained sundried tomatoes. Cook for 3-4 minutes.
- Add in the mushrooms. Cook for 2 more minutes.
Make the Sauce
- Slowly add in the half n half.
- Stir in the Old Bay Seasoning.
- Add in about half of the parmesan cheese. Bring to a boil, stirring frequently. Once this boils, reduce heat to medium-simmer.
- Gradually start adding in the remaining Parmesan cheese while stirring. Add just enough to get the sauce creamy without being too thick. You may not need to use all of the cheese.
- Add the cooked, peeled & deviened shrimp to the sauce. Heat 1 minute.
- Remove the sauce from the heat. Taste and adjust if necessary (salt or more Old Bay Seasoning). If the sauce is too thick, slowly add some reserved pasta water, stirring to combine.
Finish the Dish
- Drain the fettuccine.
- Add the fettuccine into the sauce, stirring thoroughly.
- Serve and enjoy!

Possible Changes to Bayou Shrimp Pasta
Having enjoyed this meal at home and in restaurants, I can say that John’s version is just as good as in the restaurants. The combination of parmesan cheese with half and half made a great sauce, and the Old Bay was a nice seasoning for the dish. If you’d like a spicier dish, you might want to try adding either red pepper flakes or Zatarain’s New Orleans Style Creole Seasoning. We thought it was perfect just as the recipe states – we felt there was no need to add anything. Give it a try – I think you’ll enjoy it too!
