I’m finally back to cooking in the oven now that the temperatures have started dropping. One of my favorite fall and winter meals is stuffed bell peppers. I’ve always made the stuffed pepper filling in the traditional way: ground beef, rice, and tomato sauce stuffed into peppers. I started reading about people using sloppy joe mix in their stuffed peppers and did some experimenting. Now I understand why people like this so much!

I have certain brands of products that I always use, and one of them is Lawry’s. Don’t be alarmed by the commercial-sized packages that are sold on Amazon! Dump the contents into a plastic container and tape the recipe onto the lid. The Lawry’s Sloppy Joe Seasoning Mix package is enough for 10 pounds of ground beef, and you’ll only be using about a fifth of that for this recipe. They also make seasoning mixes in commercial-sized packages for Chili, Fajitas, Tacos, and Mexican Rice. They make great seasonings – I’ve had all of them except for the rice (I still need to try that one!).

The recipe looks complex, but it’s easy enough to make. The flavors the Sloppy Joe Stuffed Peppers have make it worth it!

Sloppy Joe Stuffed Peppers

After a little experimentation, I've come up with a recipe for stuffed peppers that is full of flavor and oh so good, thanks to Lawry's Sloppy Joe mix!

Ingredients

For the Sloppy Joe mixture:

  • 2 pounds ground beef
  • 20 ounces water 2 1/2 cups
  • 12 ounces Contadina Tomato Paste
  • 6 tablespoons Lawry’s Sloppy Joe Seasoning Mix

For the Stuffed Peppers:

  • 1 jar Silver Palate San Marzano Marinara Sauce 25 ounce Silver Palate San Marzano Marinara Sauce
  • 6 bell peppers large, I like the red ones because of their sweetness
  • 2 cups white rice cooked (Minute Rice is fine if you prefer)
  • 1/2 cup water

Instructions

Make the Sloppy Joe Meat Mixture:

  • Brown and drain the ground beef.
  • Add in the water, tomato paste, and Lawry’s Sloppy Joe Seasoning Mix.

  • Bring it to a boil. Once boiling, reduce heat and simmer for 15 minutes, stirring occasionally.

Stuff the Peppers & Cook:

  • Preheat the oven to 375 degrees.
  • Pour about 1/4 of the jar of the Silver Palate San Marzano Marinara Sauce into the baking dish or disposable tray. Spread it across the bottom.

  • Cut off the tops of the Bell peppers and remove the seeds. Wash the inside and the outside of the peppers and place them into the baking dish or tray.

  • Prepare the rice according to the directions on the box.

  • Pour the water into the jar of Silver Palate San Marzano Marinara Sauce, replace the lid, and shake to mix. This will thin down the sauce.
  • Add the cooked rice and about half of the jar of sauce into the Sloppy Joe mix.

  • Using a tablespoon, fill the peppers with the mixture, pressing down to fill them.

  • If there is filling remaining, you can either cook it separately in a casserole dish or you can add it below and around the peppers.

  • Top the stuffed peppers with the remaining sauce in the jar.

  • Make at 375 degrees (uncovered) for 1 hour.
