I love recipes that come together quickly. For this reason, I always have bags of shrimp in my freezer (they are perfect for nights when you want to make dinner fast). I had previously shared a recipe for Honey Garlic Shrimp with Broccoli over Rice and thought I could use the same sauce, but instead of broccoli, I’d use stir-fried vegetables. It turned out great! Here’s a simple dinner that you can have on the table in just over half an hour.

This recipe is as flexible as the other one I shared. You can make the marinade the night before if that’s easier. If not, you can let the shrimp marinate in the refrigerator for as little as 15 minutes. You’ll be amazed at how quickly you can serve dinner with this recipe. The best part—it’s good!

  • 2/3 cup honey
  • 1/2 cup soy sauce you can use reduced sodium if you prefer
  • 4 cloves garlic minced (or 4 teaspoons of Spice World Minced Garlic)
  • 2 teaspoons ginger fresh minced, or 2 teaspoons of Gourmet Garden Ginger Paste
  • 1 pound shrimp medium uncooked, peeled and deveined
  • 2 teaspoons olive oil split: 1 tsp when cooking the vegetables, 1 tsp when cooking the shrimp
  • 2 tablespoons water
  • 3 cups rice whichever type you prefer – Minute Rice, brown rice, etc
  • 14.4 oz stir fry vegetables frozen is fine or fresh (I use Bird's Eye Broccoli Stir Fry)
  • scallions optional, chopped for garnish

Instructions

  • Mix the honey, soy sauce, garlic, and ginger in a bowl. Stir until well combined. 1/3 of this will be used in the marinade (see the next step) and the remainder will be used when you cook the shrimp.
  • Place the shrimp into a zip lock bag or a sealable container. Pour 1/3 of the sauce on top, shake or stir, and allow this to marinade in the refrigerator for at least 15 minutes (or up to 12 hours). Cover and refrigerate the remainder of the sauce that will be used when you cook the shrimp.
  • While the shrimp is marinading, prepare the rice you'll serve with dinner.
  • Heat 1 tsp olive oil in a nonstick wok over medium heat. Add the bag of frozen stir-fry vegetables. Add the water. Cover and cook for 5-7 minutes, stirring occasionally. Remove the vegetables from the wok and cover them to keep warm.
  • Heat the remaining 1 tsp olive oil in a nonstick wok over medium heat. Place the marinaded shrimp into the skillet and discard the used marinade. Cook shrimp on one side until pink, usually about 45 seconds. Flip the shrimp over and pour in the remaining marinade. Continue until the shrimp is cooked, about 1-2 more minutes. Stir in the stir-fry vegables and cook 2 more minutes, thoroughly coating them in the sauce.
  • Assemble dinner: rice on the bottom, honey garlic shrimp stir fry on the top. Garnish with chopped scallions if you prefer.
