Here’s How to Make Guinness Beef Stew on the Stovetop

Based on a recipe from Viking Cruise Lines, this dinner smells as good as it tastes! Beef, onions, carrots, mushrooms, noodles, Guinness Extra Stout Beer, and a few other ingredients make up what’s now our favorite stew.

Introduction

I’ve said it before – my husband is the better cook! He can look at a recipe and know if it will be good. Presently, I do not have that skill! So, I asked him to search for a good beef stew recipe. Surprisingly, he landed on the Viking River Cruises’ website (I can’t imagine how!). He found a recipe for Carbonnade a la Flamande. I guess you have the same question I had when he suggested: What in the world is that? If I had to come up with what it is so that everyone would understand, it’s a wonderful Beef and Guinness Stew that you cook on the stovetop in a Dutch Oven or a large pot! It’s a great wintertime meal, but I can’t resist not having this all year long. We always serve it with some biscuits for dunking!

Beef & Guinness Stew – a Stovetop Recipe

Based on a recipe from Viking Cruise Lines, this Beef & Guinness Stew smells as good as it tastes! Beef, onions, carrots, mushrooms, noodles, and Guinness Extra Stout Beer along with other ingredients are used in what’s now our favorite stew.

Equipment

Ingredients

  • 3.25 pound beef chuck roast cut into 2-inch or larger pieces
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 tbsp all-purpose flour heaping tbsp
  • 3 tbsp olive oil split in half for searing the meat
  • 2 tbsp butter
  • 3 onions large, peeled (one chopped up small, and the other two in larger wedges)
  • 16 ounce baby carrots bag
  • 4 cups beef broth I use Progresso
  • 1 tbsp brown sugar packed; I use dark brown sugar
  • 1 tbsp Tomato Paste I use Pomi Double Concentrated
  • 3 tbsp Better Than Bouillon Roasted Beef Base substituted for beef demi-glace
  • 1.5 cups Extra Stout Beer substituted for an Oud Bruin Style Beer from Belgium, I use Guinness
  • 8 oz. mushrooms sliced or button
  • 2 tsp thyme the recipe said fresh; I had dry thyme
  • 1/2 tsp garlic powder or granulated
  • 2 tsp parsley the recipe said fresh; I had dry parsley
  • 16 oz egg noodles see the notes for options
  • 2 tsp cider vinegar optional; I didn't use this

Instructions

  • Season beef with salt and pepper and dust it with flour. Heat olive oil in a large soup pot or Dutch oven over medium-high heat. Add beef in batches: sear on all sides. Transfer to a plate and set it aside.
  • Add butter and reduce heat to medium. Add onions and carrots and sauté until lightly golden, about 6-10 minutes.
  • Whisk together 1 cup beef broth, brown sugar, tomato paste, and Better Than Bouillon (or demi-glace). Add to vegetables, stirring to combine. Add beer and bring to a boil over high heat. Reduce heat and simmer for 20 minutes.
  • Return the beef to the pot along with the mushrooms, thyme, and remaining beef broth. Cover and simmer for 2 hours until the meat is very tender. Before serving, stir in parsley and optional cider vinegar to taste. About 30 minutes before the stew is finished, boil water and make your egg noodles according to the package directions.

Notes

  • Options for serving: egg noodles, with potatoes, or on top of mashed potatoes.
  • Feel free to adjust the recipe including the liquid based on the size of your chuck roast.
  • Rather than cutting the chuck roast into 2″ pieces yourself, ask your butcher at the grocery store for help.  Our Publix in Florida has a great butcher who is happy to help you save time by trimming off the heaviest fat and cutting up the roast.
  • We like to serve this with Pillsbury Grands Original Flaky Layers Refrigerated Biscuits.
