Ingredients

Base Ingredients:

  • 13-14 ounces approximately 1.5 packages Barilla Oven Ready Lasagne (pre-boiling not required)
  • 8- ounce package of Sargento Shredded Whole Milk Mozzarella Cheese
  • 1/2 cup grated Parmesan Cheese I buy our store brand, which is Publix
  • Optional garnish

Sauce Ingredients:

  • 2 tablespoons olive oil
  • 1.5 pounds of lean ground beef
  • 1 small yellow onion diced
  • 1 tablespoon Spice World Minced Garlic or 3 cloves garlic, minced
  • 1 Silver Palate San Marzano Blend Marinara Sauce 25 ounces
  • 2 cans Contadina Petite Diced Tomatoes 14.5 ounces
  • 2 tablespoons Pomi double-concentrated tomato paste
  • 1 tablespoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 teaspoons Kosher salt
  • 1/2 teaspoon ground black pepper

Cheese-Filling Ingredients:

  • 3 cup Galbani Whole Milk Ricotta Cheese
  • 4 ounces 1/2 package of Sargento Shredded Whole Milk Mozzarella Cheese
  • 1/4 cup grated Parmesan Cheese I buy our store brand, which is Publix
  • 1 egg
  • 2 tablespoons fresh preferred or dry parsley leaves (optional)

Instructions

  • In a large saucepan, heat the olive oil. Cook the ground beef, onions, and garlic until no pink remains in the meat. Drain the fat that remains.
  • Stir in the sauce, diced tomatoes in their juices, tomato paste, and the seasonings. Simmer for 10-12 minutes or until thickened.
  • In a large bowl, mix together the cheese-filling ingredients.
  • Spread 1 1/2 cups of the sauce mixture in the bottom of a 6-7 quart slow cooker. Top this with a layer of uncooked lasagna noodles, breaking them if need be.
  • Create 2-3 layers of the cheese mixture, sauce, and noodles, ending with pasta sauce. Top with the 8 ounces of shredded mozzarella cheese and the 1/2 cup of grated parmesan cheese.
  • Cover and cook on low for 3 – 3 1/2 hours or until the pasta is cooked through (the edges will be brown and crispy). Turn the slow cooker off, open the lid slightly, and allow the steam to escape slowly. Let this rest for 30 minutes prior to serving.

This recipe serves eight, and for just the two of us, that works fine!  We’ll have Crockpot Lasagna twice in a week and then I’ll freeze four more pieces that we’ll use for two dinners when I don’t feel like cooking.
