Here’s a Recipe for Crockpot Beef & Guinness Stew – You’ll Love It!

Based on a recipe from Viking Cruise Lines, this crockpot dinner smells as good as it tastes! Beef, onions, carrots, mushrooms, noodles, Guinness Extra Stout Beer, and other ingredients make up what’s now our favorite stew.

Introduction

I’ve said it before – my husband is the better cook! He can look at a recipe and know if it will be good. Presently, I do not have that skill! I asked him to search for a good beef stew recipe. Surprisingly, he landed on the Viking River Cruises’ website (I can’t imagine how!). He found a recipe for Carbonnade a la Flamande. Are you asking the same question I had: What in the world is that? If I had to come up with what it is so that everyone would understand, it’s a wonderful Beef and Guinness Stew that you cook in a crockpot or a slow cooker! It’s a great wintertime meal, but I can’t resist not having this all year long. We always serve it with some biscuits for dunking!

Crockpot Beef & Guinness Stew

Based on a recipe from Viking Cruise Lines, this Beef & Guinness Stew smells as good as it tastes! Beef, onions, carrots, mushrooms, noodles, and Guinness Extra Stout Beer along with other ingredients are used in what’s now our favorite stew.

Ingredients

  • 3.25 pound beef chuck roast cut into 2-inch or larger pieces
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 tbsp all-purpose flour heaping tbsp
  • 3 tbsp olive oil split in half for searing the meat
  • 2 tbsp butter
  • 3 onions large, peeled (one chopped up small, and the other two in larger wedges)
  • 16 ounce baby carrots bag
  • 4 cups beef broth I use Progresso
  • 1 tbsp brown sugar packed; I use dark brown sugar
  • 1 tbsp Tomato Paste I use Pomi Double Concentrated
  • 3 tbsp Better Than Bouillon Roasted Beef Base substituted for beef demi-glace
  • 1.5 cups Extra Stout Beer substituted for an Oud Bruin Style Beer from Belgium, I use Guinness
  • 8 oz. mushrooms sliced or button
  • 2 tsp thyme the recipe said fresh; I had dry thyme
  • 1/2 tsp garlic powder or granulated
  • 2 tsp parsley the recipe said fresh; I had dry parsley
  • 16 oz egg noodles see the notes for options
  • 2 tsp cider vinegar optional; I didn't use this

Instructions

  • Season the beef with salt and pepper and dust it with flour. Heat the olive oil in a large saute pan over medium-high heat on the stovetop. Add the beef in batches: sear on all sides. Transfer it into the crockpot once browned.
  • Add butter to the saute pan and reduce the heat to medium. Add the chopped onions and sliced carrots and sauté until lightly golden, about 6-10 minutes. Add in the tomato paste and the Better Than Bouillon and mix well, cooking for 1-2 more minutes. Add in 1/4 cup of Guinness and scrape up the bits from the bottom of the pan. Transfer all into the crockpot.
  • Add into your crockpot the remaining Guinness, beef broth, brown sugar, button mushrooms, thyme, and parsley. Stir to combine all ingredients together.
  • Cover and cook on high for 4 hours or on low for 8 hours. Note that cooking times can vary depending on your crockpot. When finished, adjust the seasonings if you feel it needs it.
  • About 30 minutes before the meal is finished, make your egg noodles.
  • To serve, place your egg noodles into a bowl and top them with the Beef & Guinness Stew mixture. Top with some optional cider vinegar to taste.

Notes

  • This recipe includes egg noodles, but you can serve it with small potatoes or on top of mashed potatoes if you prefer.
  • Feel free to adjust the recipe including the liquid based on the size of your chuck roast.
  • Rather than cutting the chuck roast into 2″ pieces yourself, ask your butcher at the grocery store for help.  Our Publix in Florida has a great butcher who is happy to help you save time by trimming off the heaviest fat and cutting up the roast.
  • The estimated cooking time shown is based on cooking it in your crockpot on low.  If you cook it on high, the cooking time will be about 4 hours.
  • We like to serve this with Pillsbury Grands Original Flaky Layers Refrigerated Biscuits.
